This impressive looking and dazzling tasting dessert takes only 5 minutes to make, is completely vegan and guilt free. Even your most health conscious dinner guests can enjoy this after dinner, or you can pack it for a midday snack or even enjoy it for breakfast.
Ingredients:
Can of organic, full fat coconut milk
1 cup white chia seeds
1.5 tbsp. vanilla bean powder
2 tsp. vanilla extract
2-3 tbsp. maple syrup or honey
Pinch of sea salt
Instructions:
In a bowl, combine your coconut milk, chia seeds and other ingredients. Let sit for 5 minutes and then serve into small jars or bowls. Top with fresh sliced figs and raw unsalted walnuts. Stores in the fridge for 2-3 days, a few days extra without the fresh fruit.
