2 medium sized zucchinis, spiralized in a spirooli or noodle maker
small handful of fresh cherry tomatoes
Pesto:
1 avocado
2 tbsp. sunflower seeds
1/2 cup olive oil
pinch of salt
3 garlic cloves
Method: Blend pesto ingredients in your blender and pour over your zucchini noodles. Store the pesto for up to 3 days in a glass jar in the fridge.
