Next time you’re looking to serve up a hearty dinner for you and your friends, carve up a head of cauliflower to make these scrumptious cauliflower steaks. Each head of cauliflower makes 4 steaks. Play around with all your favorite sauces, reductions and puree’s but this roasted red pepper and caramelized onion relish is my current favorite.
Serves 2
Ingredients
Roasted Red Pepper and Caramelized Onion Relish
- 2 tsp olive oil
- 1 red onion, finely diced
- 1 Tbsp white wine vinegar
- 1 clove garlic, chopped fine
- 1 roasted red pepper, peeled, seeded and finely diced
- ½ tsp fresh thyme
- Salt and pepper
Cauliflower Steaks
- 1 large cauliflower
- Olive oil
- Salt and pepper
- Optional: garlic or onion powder
Preparation
Roasted Red Pepper and Caramelized Onion Relish
- In a medium saucepan, heat olive oil over medium heat. Add onions and cook slowly until caramelized.
- Deglaze pan with white wine vinegar. Add in garlic, roasted red peppers and thyme. Cooking for another 5 minutes or until thick.
- Season with salt and pepper and allow to cool.
Cauliflower Steaks
- Preheat oven to 375F.
- Cut cauliflower head in half and then cut each half into 2 ¾ inch steaks.
- Season each steak.
- In a frying pan, heat olive oil over medium-high heat. Sear each side of cauliflower steaks until golden about 3-4 minutes.
- Transfer each steak to a baking sheet. Bake 15 to 20 minutes or until tender.
- Serve with Red Pepper and Caramelized Onion Relish
