No dinner party would be complete without an indulgent dessert! Eating raw means everything is dessert- so you can have this delectable martini glass of yum anytime! Food isn’t just about taste, it’s also about colour, texture and presentation. We eat with our eyes as much as we do with your noses and mouth. Have fun and get creative with this easy to make sumptuous chia, chocolate & strawberry dessert.
Tip before you begin: We found it was easy to prepare the separate layers the night before or a few hours ahead, so when it comes to laying the dessert you can just focus on getting creative and making it look pretty.
Bottom layer – Chia pudding
- 2 tbsp chia seeds
- 1/2 Almond milk
- A pinch cinnamon
- 1 tsp of honey
Add all of the ingredients together, give it a good stir and let it set (takes around 20mins). When your ready to serve up the chia seeds, this mixture will probably be hard and sink to the bottom in a clump, so give it a good stir and add some more almond milk of you need to until you get it to the consistency it looks like in the photo.
Top Layer – Chocolate Mousse
- 1/2 avocado
- 1 tbsp of cacao
- 1 tbsp of honey
Mash the avocado with a fork in a bowl, then add cacao and honey. Add more cacao if you want the flavour packed with more of a chocolate punch and more honey if you want it sweeter. Let it set in the fridge for a few hours. When you’re ready to serve this delightful dish, give it a good stir and you can also add some water if it’s a bit hard and you prefer your mousse a bit more creamy.
Layering your dessert
We started by filling half the glass with the chia seed pudding, then adding strawberry slices around the outside, topped off with the chocolate pudding. For decoration you can use whatever you have-just have fun with it! We used more strawberries, cocoa nibs, sprouted buckwheat and goji berries.
